Susan's Sponge Cake
Actually, it's Sheung's mom's sponge cake.
Ingredients:
- 1 C Flour (superfine cake flour!!)
- 1 C Sugar
- ½ C Water
- ½ C Cooking Oil
- 1 tsp Baking Powder
- 1 tsp Cream of Tartar
- 8 Eggs
Equipment:
- Ring cake pan (ring is necessary for structural integrity)
Instructions:
1. Preheat the over at 350*F
1. Separate the egg yolks/whites into different mixing bowls. Mix yolks + water + sugar + oil and whisk until pale yellow. Add cake flour + baking powder into the yolk mixture and combine evenly.
1. In the second bowl whisk the egg whites + cream of tartar until it forms a firm peak.
1. Fold in the egg white mixture to the egg yolk batter and bake for ~35-45 minutes in an un-greased cake pan. Insert a toothpick and make sure it comes out clean then take the cake out of the oven and let it rest upside down until it cools down.
