Jennifer spatchcocked two chickens, marinaded them in the following recipe, then grilled them "under a brick": a cookie sheet weighed down with bricks.

I made a paste with the following ingredients:

2 TB minced garlic
2 TB whole grain mustard seed (I actually made a
mistake here and used mustard seed.  The recipe called
for whole grain mustard.  I am glad you liked it.  I
liked it too. :-) )
2 TB finely chopped fresh thyme
2 TB finely chopped fresh rosemary
2 TB coarsely ground white pepper
2 TB fresh lemon juice
2 TB extra virgin olive oil
kosher salt on the chicken

This is paste for 2 chickens (4 pound each).
