Cranberry Sauce with Port and Orange
This is a rich and sweet whole-berry cranberry sauce. It is flavored with orange, but has no bitter orange peel, unlike traditional cranberry-orange relish. The port and liqueur add substantial complexity to the background. Ingredients
- 12 oz. fresh or frozen cranberries
- One medium orange, zested and juiced:
- zest finely chopped, or 1/4 tsp Boyajian orange oil
- Juiced, or 1/3 cup orange juice
- 2 TBSP Gran Marnier
- Port to make one cup liquid with above (a scant 2/3 cup)
- 3/4 cup sugar
Procedure
Pick over, clean, and drain cranberries. Bring juice, zest, liqueur, port, and sugar to a boil. Add cranberries, and return to a boil. Boil gently for 10 minutes; stir occasionally. Let cool to room temperature, then pour into mold and refrigerate.
