It is flavored with orange, but has no bitter orange peel, unlike traditional cranberry-orange relish. The port and liqueur add substantial complexity to the background. Ingredients * 12 oz. fresh or frozen cranberries * One medium orange, zested and juiced: * zest finely chopped, or 1/4 tsp Boyajian orange oil * Juiced, or 1/3 cup orange juice * 2 TBSP Gran Marnier * Port to make one cup liquid with above (a scant 2/3 cup) * 3/4 cup sugar = Procedure = Pick over, clean, and drain cranberries. Bring juice, zest, liqueur, port, and sugar to a boil. Add cranberries, and return to a boil. Boil gently for 10 minutes; stir occasionally.
