Christina's Fried Tofu
Christina made this for dinner when we visited in Dec 2007. The tofu develops a nice brown crust.
- 1 block of firm tofu
- 1 bunch green onions
- oyster sauce
Several hours before cooking, cut the tofu into flattish, rectangular blocks about 1" across and 0.5" tall; the larger surfaces will be in contact with the oil. Leave the tofu out to drain and dry on a paper towel (this step is important to remove excess water).
Heat vegetable oil in non-stick pan, just short of the smoking point. Reduce heat to medium. Fry tofu on one side until golden brown, then flip and repeat. Add green onions, stir fry a bit. Finish with oyster sauce.
